This post is going to be super, super random. I’m warning you.
I’ve been up since 5:30 and went to bed at almost midnight. This means I’m exhausted and delirious…yet I cannot sleep.
I didn’t think Teresa was totally off her rocker until the reunion last night. I think she’s completely convinced everyone now that she’s nuts.
We went apple picking this weekend and I’m going to make a LOT of apple muffins. Maybe today. If I can nap and bake at the same time.
I wanted to pick my own tomatoes too, but the tomato farm was completely overgrown and soaked from the rain, so I opted to buy about 20-25 pounds (literally) of tomatoes from the farm store for $14.00. I made a HUGE pot of diced tomatoes and an even bigger pot of tomato sauce. Pasta and cheese was eaten and the rest was frozen. The smell of my house yesterday was incredible.
I’m starving today and about to eat a oatmeal chocolate chip cookie at 9:16 in the morning. Good thing they are mostly healthy. I’ll post recipe tomorrow.
Since it’s October and it’s my birth month, I can no longer call anyone in my family without them asking if I’m okay when they pick up the phone. I have to basically text everyone before I call them (if they are at work) because they think I’m in labor.
Jessica got it right with these crispy quinoa sliders. I made them without cheese and baked them. I individually wrapped them and put them in the freezer so we can have some easy lunches and dinners when baby is here. I kind of want to make these and freeze them too. Maybe this weekend it will happen.
This is the week the car seat gets installed and we purchase our stroller!
I’m determined to make 3 batches of muffins, 1 batch of soup and maybe the turkey meatballs before baby. I better get started. I need my husband to take a day off work just to clean up after me.
I wish I lived closer to these girls because I’d love to have ALL of these fall recipes made for me.
Okay I’m done. I’m off to go for a walk because I don’t feel like running today…or maybe ever again until after baby. We shall see.

We went apple picking too! It was my first time and now I already want to go back! Sounds like a fun weekend. I love that I’m not the only one that feels so random these days. I hope you have a great week Nicole!
YAY for apple picking!! We are going to probably do that in conjunction with pumpkin picking in a week or two..I figure another week or so before I start taking Ryan out and about is probably best for him =)
I make sauce but I hate to admit that I use canned tomatoes :/ I’ve never made it from total scratch before…do you just boil the tomatoes until they are soft and they puree them?
