Last weekend we came home from Martha’s Vineyard and I was in the mood for a very simple dinner. I had picked up some pumpkin when we stopped at Whole Foods, so I decided on some pumpkin chocolate chip pancakes. These were basically devoured, so there are no good pictures…next time…maybe.
Ingredients Combine all ingredients in a bowl leaving the chocolate chips for last. Heat a large pan or skillet on medium to low heat. Add a little oil, butter or non-stick spray and let pan heat up. Spoon pancakes onto pan and let cook 1-2 minutes. Flip, let brown and transfer to plate. Serve with maple syrup, butter or anything of your choosing!
